The Astral Project
This fruited sour, our second Astral Project for vintage 2021, has the deck with perfect timing as Cape Jaffa Wines is in full stride of harvest – we now have another vintage beer to drink during vintage yay!
Fermented on fresh skins/juice with use of pale and wheat malts to let the fruit shine. Inoculated with souring yeast for a lactic acid production. The Chenin is very textural and ripe - kind of nutty or curd-like with fruits like pear, lemon and even has this beautiful pineapple vibe.
There is a fair bit of booze in this awesome can, but the acidity helps with drinkability. We’ve certainly been giving it a good crack at Loophole HQ!
