The Astral Project
The 2020 Astral Project Merlot saw us win Champion Hybrid Beer at the Indie Awards so we’d be silly not to bring it back again for 2021.
As opposed to the first five 2021 Astral Project releases, this brew used ‘wet’ skins not fresh skins. These wet skins were collected when digging out the fermenters before the press. We used 25-30% skins to wort. The Merlot was not inoculated in brewery, so was fermented by the yeast(s) used in the winemaking process.
The wort used for the Merlot was the same recipe as used in the award winning 2020 version – a blend of pale, Vienna and wheat malts.
It was fermented on skins for 5 days, being plunged twice daily. Following this, it was racked to stainless tanks to finish ferment and condition for packaging.
Great acid drive, with flavours of strawberry, grape Hubba Bubba and confectionary raspberry on the nose.
