La Lune Shiraz

As opposed to the first five 2021 Astral Project releases, this brew used ‘wet’ skins not fresh skins. These wet skins were collected when digging out the fermenters before the press. We used25-30% skins to wort. It was not inoculated in brewery, so was fermented by the yeast(s) used in the winemaking process. The wort made for La Lune Shiraz was Pale, Munich and Wheat. A small amount of French Oak cubes were added to the skins of the Shiraz, giving it a bold and earthy flavour with undertones of liquorice/aniseed. Fermented on skins for five days, being plunged twice daily. Following this it was racked to stainless tanks to finish ferment and condition for packaging.
