This casual little number is our latest exploration into re-using our precious Biodynamic vineyard offerings. We hand-picked a late harvest of Cape Jaffa Wines’ Biodynamic Cabernet (which we made into a vintage-style port) and rinsed the basket-pressed skins with spring water and some blonde fruited sour. A secondary ferment ensued followed by conditioning and carbonation in stainless. Toffee apple, pear and florals with savoury skins and mineral grip. This sour’s modest ABV and light body make it an absolute quencher or one to share with food around the figurative or literal table.
